About Kodo Millet
Kodo grows well in dry regions and has been a dependable grain in Madhya Pradesh, Chhattisgarh and parts of Maharashtra for a very long time.
It has a slightly firmer bite than Foxtail, so it holds up well in dishes that simmer for a while.
How to Cook
- Rinse 1 cup millet two or three times.
- Soak for at least 30 minutes — Kodo cooks more evenly when soaked.
- Cook with 3 cups water, roughly 3 whistles in a pressure cooker.
- Let the pressure settle naturally, then fluff.
