Foxtail Millet, called Kangni or Kakum across India, is one of the oldest cultivated grains in the country. Its fine texture and neutral taste make it the easiest millet to swap in wherever you would normally cook rice.

About Foxtail Millet
Foxtail has been part of Indian cooking for thousands of years and is still a staple in parts of Karnataka, Andhra Pradesh and Tamil Nadu.
It stays separate and fluffy after cooking, which is why it works so well for pulao, lemon rice and tamarind rice style dishes.
How to Cook
- Rinse 1 cup millet until the water runs clear.
- Soak 20–30 minutes for fluffier grains.
- Cook with 2 cups water for pulao-style grains, or 2.5 cups for a softer finish.
- Rest 5 minutes before fluffing with a fork.
Best Used For
- Pulao
- Lemon rice
- Upma
- Idli & dosa batter
- Everyday rice swap
