About Barnyard Millet
Barnyard millet has long been a familiar grain in North Indian and hill-region kitchens, where it is cooked as Jhangora during fasting days and as an everyday grain the rest of the year.
It cooks quickly, stays light and takes on the flavour of whatever tempering you give it — which makes it one of the easiest millets to start with.
How to Cook
- Rinse 1 cup millet in cool water two or three times until the water runs clear.
- Soak for 20–30 minutes if you like a softer texture (optional for khichdi).
- Cook with 2.5 cups water — about 2 whistles in a pressure cooker, or 15 minutes covered on a low flame.
- Rest for 5 minutes, fluff gently and season the way you would season rice.
